Butcher - retail or wholesale (ethnic/Eastern European products)
Work conditions: Salary$ 22.50 / hour, permanent, regular, full time (40 hours / week)
Education: trades certificate or diploma in meat processing, Experience: 3 -5 years, knowledge and experience in Eastern European meat processing and meat products making including knowledge of traditional recipes and ability to develop the new ones to the taste of ethnic customers, experience with power grinder, manual cutting utensil, band saw, sausage machine, slicing machine, salami mixer and cooker, reliability, organized, accurate, flexibility
prepare and process meat from scratch including: adding spices/additives depending on type of sausage, mixing ingredients in determined proportions, processing as per customary tradition, ensure quality (duration, temperature, moisture, etc), monitoring the smokehouse to achieve the desired taste, developing and testing new recipes. Ensuring a high standard in a timely, safe and consistent manner , Operate machinery on site, -follow safety and hygiene procedures, Make special sausages and other meat products as per traditional Eastern European recipes , Prepare special orders, Cut carcasses, sides and quarters, Cut, trim and prepare standard cuts of meat, Remove bones from meat, Cut poultry into parts, Grind meats, prepare special displays of meats, Shape, lace and tie roasts, other meats, poultry and seafood, Supervise other butchers and meat cutters.
