Responsibilities
Tasks
Cut beef, lamb, pork, or veal carcasses, sides, or quarters into primal sections to facilitate handling, processing or packaging for distribution.
Slice poultry and meat into required portions and sizes for institutional, commercial, or wholesale operations.
Skillfully remove bones from various meat cuts to ensure safety and presentation quality.
Cut poultry into individual sections accoridng to requirements.
Segment carcasses, sides and halves adhering to cutting standards
Trim, shape, and prepare standardized meat portions
